The Virginia Chef’s Association Apprentices are a group of culinary students that have taken an old-school approach on attaining their culinary education. Their apprenticeship typically lasts about 3 years and 8 months, during which they attend the market as vendors about once a month. In addition to working full time and going to school, each apprentice is assigned a different product to prepare, package, and sell. The apprentices run most aspects of the market by themselves, teaching them how to manage their own business. They then use the money to attend the American Culinary Federation’s ChefConnect Conference, as well as other apprentice enrichment opportunities such as tasting menus as fine dining restaurants and team building activities. The Virginia Chef’s Association is the local chapter of the American Culinary Federation.
