Ingredients
- 4 cups Seedless Watermelon, Chunks
- 1 cup Extra Virgin Olive Oil
- 2 cups Seedless Watermelon, Small Diced
- 1 each Cucumber, Peeled, Seeded, Small Diced
- 2 each Corn on the Cob, Husked and Silked
- 1 medium Tomato, Small Diced
- 3 each Scallion, Thin Bias Cut
- 1TBL Chipotle Peppers
- 1 TBL Cilantro, Chiffonade
- 1TBL Mint, Chiffonade
- 1 each Lime Juice/Zest
- As Needed Salt & Pepper
Directions
1). Combine Cucumber, Tomato & Scallion in bowl with pinch of salt. Let sit for 30 minutes and drain.
2). Purée Watermelon Chunks, EVOO and Chipotle Till Smooth
3). Stir in remaining ingredients and adjust flavors
