Ingredients

  • 1 lb Ground Lamb (or 80% Ground Lamb/ 20% Ground Pork Fat)
  •  2 tsp. Kosher Salt
  • 1 Tbsp. Ground Coriander
  • 1 tsp. Ground Cinnamon
  • 1 tsp. Freshly Ground Black Pepper
  • 1/2 tsp. Ground Allspice
  • 2 tsp. Ground Cumin
  • 3 Tbsp. Minced Shallot
  • 4 Tbsp. Fresh Chopped Parsley
  • 1 Tbsp. Fresh Chopped Mint

Process

Combine all dry ingredients and mix well. Add to Ground Meat and mix thoroughly. Add fresh herbs and shallot mix until incorporated. Form into elongated patties and put on skewers. (Note: Wooden skewers should be soaked for several hours in water.) Grill over charcoal on both sides until done: approx. 5 min/side. (Or bake in oven at 350 degrees for about 10 min. until desired doneness)
