- 1 long purple eggplant (cut them into French fries shape and size)
- 1 Tablespoon Cayenne or red pepper powder
- 1 Tablespoon turmeric powder
- ½ Teaspoon Sugar (optional)
- Salt to taste
Mix them together and deep fry. You can bake them as well. Your Ceylon Eggplant Fries are ready now.
